The first time I saw a flax egg in the ingredients list of a vegan recipe I had no idea what it was. Inside brackets it said “1 tbsp flax seeds + 3 tbsp of water” so I did what the recipe told me and added the water and the flax seeds to the cake batter. Somehow the cake turned out super dry and I had no idea why. Until I found a blog post on the internet on how to make a flax egg the right way. I made the cake again with a “real” flax egg and it was delicious! So here comes a guide on how to make a flax egg – the right way.

Some of you might wonder why you should use a flax egg. Basically it’s a natural substitute for eggs which is used in vegan baking. I really don’t mind eating eggs or other animal products but I do think it’s fun to try new things and to bake things that everyone can eat. People who are allergic to eggs and dairy products can eat vegan food since it doesn’t contain any animal products.

It’s important to buy whole, raw flax seeds since the oils that are released via grinding can become rancid pretty quickly. I used golden flax seeds which are great if you’re doing cakes with a lighter coloe but if you’re doing anything with chocolate you can use brown flax seeds. _1090671

Ingredients

  • 1 flax egg = 1 tbsp flax seeds + 3 tbsp water
  • 2 flax eggs = 2 tbsp flax seeds + 6 tbsp water

Instructions

  1. Grind flax seeds in a high speed blender(like VitaMix) or a coffee grinder. I've tried to to do it with both a mortar and a food processor but it didn't work.
  2. In a small bowl mix the water and the ground flax seeds and put in the fridge for 1 hour.
  3. When it comes out it should be thick and gelatinous.

    Hi Thea! I was going to borrow someone’s mortar because I don’t have a blender and I’m not planning to buy one, My plan B was to buy a coffee grinder, since they are relatively inexpensive. Is there one in particular you’d recommend? Thanks!

      I don’t know anyone that would be better than other and there are different brands in every country. I think you could use a really cheap one. 🙂 Hope you’ll find one!
