These gluten free muesli muffins are perfect for a sunday brunch or as after school snacks. They’re hearty, earthy and foolproof to make. You can’t fail when making these because you just mix the ingredients. No beating eggs for 7 minutes or beating butter and sugar until light and airy. Most of my baking failures happens when I haven’t done these things properly.

I should be focusing on math and chemistry and biology but as always my thoughts evolve around everything that you can bake. So chemistry is not a priority unless I’m allowed to bake that Chemistry book in the oven on grill function until it burns. Actually I’m most frustrated on my new math book so I’d burn that one first.

Anyhow, If you’re frustrated and tired like me then eat these muffins and you will be happy. I promise. Pinky Promise.

Gluten Free Breakfast Muesli Muffins

Gluten Free Breakfast Muesli Muffins

Ingredients

  • 2 oz (60 grams) butter
  • 2 eggs
  • 1 cup milk
  • 1/4 cup raw cane sugar
  • 1/2 cup + 1/3 cup white rice flour
  • 1/4 cup potato starch
  • 2 tsp baking powder
  • 2 tsp ground cinnamon
  • 1/2 tsp sea salt
  • 1/3 cup sunflower seeds
  • 1/4 cup pumpkin seeds
  • 1/4 cup sesame seeds
  • 1/3 cup raisins

Instructions

  1. Preheat your oven to 355°F (180°C)
  2. Line a muffin pan with cupcake liners or squares of parchment paper like I did.
  3. Melt the butter.
  4. Mix all the dry ingredients in a bowl and add the raisins last.
  5. Stir in the milk, eggs and melted butter.
  6. Evenly divide the batter between the muffin cups and sprinkle sesame seeds, pumpkin seeds and sunflower seeds on top.
  7. Bake in the middle of the oven for 20-25 minutes.

Notes

Adapted from Friendly Bread Best eaten while still warm from the oven. Can be stored in an airtight container for 2-3 days.

    Oooh, these look so delicious! Haha, I so know that feeling. I mostly study biology and chemistry and I often get so frustrated with chemistry 😉 I’ll definitely bake the book one day
