earl grey tea granola-1

09 Nov Earl Grey Tea Granola

“Would you like some tea, Thea? Haha, tea, thea! Do you get it? Like Thea Tea!”

I don’t know how many times I’ve heard this. You see, the reason why my parents named me Thea and not Tea is because it wouldn’t be read as tea. However, people still like to joke about the similarity between Thea and tea. People also tend to assume that I love tea because of my name but I actually didn’t like tea until I was about 12 years old. Especially not earl grey tea.

I still didn’t like earl grey tea when I came up with this recipe but while the granola was baking in the oven it smelled so good, so I made myself a cup of earl grey tea and I loved it! The reason why I usually don’t like earl grey tea is because it’s too strong and bitter. This time I only let the tea bag infuse the hot water for 1 minute and then added a little bit of honey. I’m kind of obsessed with earl grey tea now and I’ve been drinking it the entire week.

If you’re not a fan of earl grey tea, don’t worry, this granola has a very subtle earl grey tea flavor and if you didn’t know that it was earl grey tea in there you probably wouldn’t taste it. Though you would notice that there is a slightly bitter but pleasant flavor and you would be left with the question ”What’s the secret ingredient?”
earl grey tea granola-9
earl grey tea granola-8 I never thought I would post a granola recipe on this blog because:

a) I’ve always ended up burning my granola until I made this one(which makes this a pretty good recipe because no one wants burnt granola…)
b) there are a trizillion granola recipes out there already.

The reason why I created this granola recipe is because I couldn’t stop thinking about a way to turn my breakfast into a 5 minute afternoon tea in the morning. Like fancy morning tea.

    earl grey tea granola-2
Eating this granola is like drinking a cup of earl grey tea with lemon and honey, sip on a cup of hot white chocolate, eating a lemon and poppy seed cake and snacking on some cranberry and blueberry cookies at the same time! Try to do that with the real things if you can. It’s not easy.

Instead you can make this granola and have a 5 minute “afternoon tea” every single morning. There’s white chocolate chunks in there which might not make this the healthiest morning routine but since we call it granola we can pretend that it’s really good for you!

Earl Grey Tea Granola

Make this granola and you'll turn your breakfast into a 5 minute afternoon tea in the morning.

Ingredients

  • 3 tsp loose leaf earl grey tea or 1 earl grey tea bag
  • 2/3 cup boiling water
  • 2 1/2 cups rolled oats
  • 1/3 cup sunflower seeds
  • 1/3 cup chopped pecans
  • 1/4 cup poppy seeds
  • 1/4 cup golden flax seeds
  • 1 tsp ground cinnamon
  • 1 tsp ground cardamom
  • 1 tsp vanilla extract
  • zest and juice from a small(or 1/2 large) organic lemon
  • 1/4 cup raw cane sugar
  • 1/4 cup honey
  • 1/4 cup canola oil
  • 2/3 cup dried bleuberries
  • 2/3 cup dried cranberries
  • 3,5 oz (100 g) chopped white chocolate

Instructions

  1. Preheat your oven to 175°C/350°F
  2. Let 3 tsp loose leaf earl grey tea(in a tea ball) or 1 earl grey tea bag infuse 2/3 cup of boiling water for 15 minutes.
  3. Mix rolled oats, sunflower seeds, chopped pecans, poppy seeds and golden flax seeds in a large bowl and set aside.
  4. Mix the infused earl grey tea with the rest of the ingredients, except for the dried berries and white chocolate, in a saucepan over low heat until just melted.
  5. Pour the wet ingredients over the dry and mix thoroughly.
  6. Spread the granola on a baking tray lined with parchment paper.
  7. Bake in the middle of the oven for 40 min or until golden brown. Stir the granola every 10 minutes.
  8. Let the granola cool completely on the tray before you mix it with the dried berries and chopped white chocolate. Store in an airtight container in a cool and dry place.

Notes

The granola will still be a little soft when you take it out of the oven but it will get crispy once cooled completely.

Earl grey tea granola is so unique. Earl grey was one of the only tea flavours I liked when I was a child, though, I like the bergamot scent. I always burn my granola, too

I’m not a tea person, but I like an idea of having it in granola. And with your name, I’d never think of it,. I have a friend Thea and I never connected it with tea 🙂

Thanks Marta for commenting! Maybe it’s just people in Sweden who connect Thea with tea since it’s an english name. 🙂

    Haha, what a pun Thea!
Well, I absolutely love tea (and probably drink a little too much from time to time 😉 )
And granola… I make my own granola and I love experimenting with new flavour combinations. Never thought of adding tea, but it sounds amazing!

I wanted to inquire as to why you steeped the tea for 15 minutes?

    • Thea Tillberg
      Posted at 08:40h, 24 February

Because I wanted it to be strongly brewed tea in order to give the granola flavor. 🙂

Do you use the cooked tea leaves or just the tea water without the leafes?

Hi Anne! I let the tea leave steep in the hot water and then pour it through a sieve and discard the tea leaves. The infused hot water is added to the granola along with the other ingredients. Hope this helped!

This looks so good but how strong is the taste of Earl Grey? Is it more subtle than you’d think? Can’t wait to make it!

It’s pretty subtle so if you want it to be really strong, add more tea leaves or let it steep for longer. 🙂

Thanks for this splendid idea! Such a unique flavor, and turned out great. To up the flavor, I used 2 tea bags and added 7 drops of bergamot essential oil. As always, it’s fun to customize the ingredients. I also made it clustery by making a flax egg with a tbsp of ground flax with the lemon juice. I lowered the oven to 325 and didn’t stir. Cooled 15 min, broke into pieces, then baked 15 more minutes.

Hi! Sorry, I’m just curious how much ml/ grams is your one cup? I just started trying baking so I’m still trying to get better with the measurements.
