14 Dec Gingerbread Tipi (+ Free PDF Template)

Last year I was hit by a gingerbread house fever and spent two days making a classic Swedish turn of the century villa with gelatine glass windows. I was so happy when it was finally finished so I left it on the dining table as a centerpiece. For some reason I couldn’t sleep that night and suddenly I heard a noise from the dining room. I knew immediately what the sound was, but I really hoped that I was wrong. Unfortunately I wasn’t. My dog Hälge was standing with his front paws on the dining room table and he was looking at me with those big puppy eyes. He knew he was caught! A big part of the roof and the wall was gone, so many hours of work wasted…

I was angry at him for two days but eventually I couldn’t resist those cute puppy eyes (He’s not a puppy anymore even though he behaves like one…) and we became friends again. One could think that he’s matured now but when we came home one evening earlier this week we found a big plastic bag on the floor. Before we left it was full of gingerbread cookies. Now, those cookies were inside Hälge’s stomach. I’m pretty sure he likes gingerbread cookies.

The icing looks really bad and it’s because I’ve never made royal icing before so I had no idea how thick it should be. First when I started piping I realized that it was too loose. It started dripping everywhere and I had to hurry, that’s why it looks so sloppy. You’ll probably make a much prettier tipi than mine if you’re good at piping and know how to make the perfect royal icing. Do you know how hard it is to use 1/4 egg white in a recipe? Even if you weigh the egg it’s really hard to add the exact amount because the entire egg white wants to come along.

I knew that I wanted to make a simple gingerbread house this year for several reasons. First of all there’s always the possibility that Hälge will eat it again so I didn’t want to spend time on something that would be ruined the same day. Neither did I have the time to spend two days on a gingerbread house because of…(drumroll)… Schoooool!! Last but not least I like minimalistic and small gingerbread houses. They’re kind of cute!

  rainbow warrior musikal

This fall I’ve been working on a musical together with the seniors in my school. Here’s some information to all of my Swedish readers, about the musical and how to buy tickets :

16 jan, fredag

17 jan, lördag

18 jan, söndag

23 jan, fredag

24 jan, lördag

25 jan, söndag

That is the most hysterical story about your pup.. did you at least get to take some photos before he devoured the roof?! It sounds gorgeous. But I am DYING over this tipi. I have to make one! And I have *never* had the desire to make a gingerbread structure of any sort. But this.. this is just too much!

I’ve been working on a gluten free gingerbread cookie recipe but I’m not completely satisfied with it yet. I’ll hopefully publish it next year!

I used your template but end up snapping off three of the tipi “sticks” out the top to make it work.
I would post a pic but it won’t let me. Thank you for sharing!!! It would have been a bit difficult without a template. 🙂
