15 Mar Sweet Potato Sourdough Waffles
It wasn’t until I sat down to write this post that I realized that my Wednesdays has somehow turned into waffle-days. Every Wednesday I begin school after lunch which means that I have the entire morning to make fancy breakfasts, like waffles or pancakes. Ever since I published this recipe I’ve been obsessed with sourdough waffles and I’ve done some experimenting with different flours and flavors.
My intentions when developing this recipe was to make a more filling waffle, only made with one flour(except from the brown rice and buckwheat flour from the sourdough starter) and it would not only be gluten free but also dairy free. I decided to make sweet potato sourdough waffles because they’re more filling and fibre rich. I chose to only use millet flour because of it’s nuttiness which pairs well with the sweet potato. Instead of buttermilk I used hazelnut milk and apple cider vinegar and the butter was replaced with coconut oil. Then I added ground ginger, cardamom and cinnamon because it’s my favorite combination of spices. The result was a flavorful waffle that was crisp on the outside and soft on the inside!
I made my own baked sweet potato puree which is really easy but it takes some time. Baking the sweet potatoes before pureeing them will bring out so much more flavor than if you’d boiled them instead. You could of course use a regular canned sweet potato puree but the baked puree tastes so much better and is the perfect compliment to the nutty millet flour.
My mother said that these were one of the best waffles she’d ever had. Yep, they’re that good. My obsession with everything sourdough and especially sourdough waffles has no limit and I can’t imagine making a waffle without sourdough again. Maybe I’ll do waffles with yeast now and then but I’ll never rely solely on bicarbonate. As soon as you start making raised waffles you’ll never go back. I promise.
By the way, these would be perfect for mother’s day. In Sweden we don’t celebrate it until the end of May but I know that a lot of you is celebrating it today. Oh right, you can’t make these today because you’d have to prepare these yesterday… But you can make some other waffles, preferably heart shaped.
Ingredients
- overnight sponge:
- 220 ml (1 cup minus 2 tbsp) non dairy milk (I used hazelnut milk)
- 120 g (1/2 cup) gluten free sourdough starter (100% hydration), refrigerated
- 120 g (1 cup) millet flour
- 30 g (1 1/2 tbsp) honey
- waffle batter:
- 1 egg
- 50 g (1/4 cup) melted coconut oil
- 135 g (1/2 cup) sweet potato puree*
- 1 tbsp apple cider vinegar
- 1 tsp vanilla extract
- 1/2 tsp cinnamon
- 1/2 tsp cardamom
- 1/2 tsp ground ginger
- 1/2 teaspoon salt
- 1/2 tsp bicarbonate of soda
- all of the overnight sponge
Instructions
- In the evening: Mix all of the ingredients for the overnight sponge in a medium sized bowl. Cover with cling film and leave in room temperature overnight.
- In the morning: Preheat your waffle iron. In a small bowl, whisk together the rest of the ingredients and add to the overnight sponge. Wait for it to start to bubble and swell a little.
- Pour about 1/2 cup* of batter onto your preheated waffle iron, greased with coconut or canola oil and bake according to manufacturers instructions.
- Serve immediately, to ensure crispness.
Notes
I use a heart shaped waffle iron and about 1/2 cup of batter works for me. If you have a belgian waffle iron you’ll have to adjust the amount of batter. I made my own sweet potato puree by roasting 2 inch squared cubes of sweet potato in the oven at 200°C / 400°F for 20 min. Then I mixed them in a food processor and pureed through a fine-mesh sieve. A canned puree works as well but preferably buy a baked sweet potato puree.
