08 Oct Sourdough Pancakes w/ Caramelized Apples

What’s life in Lund like? It’s great but kinda stressful. My schooldays are very long, I have so many things to do and I’m also renovating my apartment. At first I didn’t have a shower for almost 3 weeks and had to shower at the gym. And at the moment I don’t have a kitchen and the rest (read one bedroom) is filled with Ikea cabinets for the new kitchen. So apart from doing the dishes on the toilet, living in a chaos and not having time for anything, it’s great! I love Lund, I love architecture school and I love being able to sketch and paint all day long and call it schoolwork.

When fall started to arrive here in Lund a few weeks ago (pre kitchen renovation) I couldn’t stop thinking about apples, cinnamon and all the autumny things in the world. So I made buttery sourdough pancakes with caramelized apples and a lot of cinnamon. And then I topped it with pecans because why wouldn’t I? They were delicious and writing this post and looking at the pictures just makes me want to have pancakes…

Sourdough Pancakes w/ Caramelized Apples

Ingredients

  • overnight sponge:
  • 60 g oat flour
  • 60 g millet flour
  • 30 g caster sugar
  • 170 g oat milk
  • 120 g gluten free sourdough starter (100% hydration), refrigerated
  • pancake batter:
  • all of the overnight sponge
  • 1 egg
  • 50 g melted butter, cooled
  • 1/2 teaspoon salt
  • 1 1/2 tsp baking powder
  • 1 tsp psyllium husk powder
  • caramelized apples:
  • 2 small apples, cored and cut into thin slices
  • 25 g butter
  • 3 tbsp caster sugar
  • 1/2 tsp cinnamon
  • a handful of pecans, roughly chopped

Instructions

  1. In the evening: Mix all of the ingredients for the overnight sponge in a medium sized bowl. Cover with cling film and let rest in room temperature overnight.
  2. In the morning: Make the caramelized apples first by sautéing the apples with the butter, sugar and cinnamon in a large non stick pan for about 5 minutes on medium heat. Take the apples of the heat before they get too soggy, I like it when the apples still have some bite in them.
  3. Then make the pancake batter. Add the egg, melted (and cooled) butter, salt, baking powder and psyllium husk powder to the overnight sponge and whisk together.
  4. Heat a large non stick pan(you can use the same as for the apples, just make sure to wipe it out before.) and add a tablespoon of butter. Once the butter has started bubbling and then turned quiet pour about 1/4 cup of pancake batter for each pancake into your hot pan. You should be able to fit 3 pancakes at a time. Flip the pancakes once the bubbles that appear on the top stay their. Cook for another minute on the other side. Repeat for all the pancakes.
  5. Serve the warm pancakes with the caramelized apples and roughly chopped pecans. Enjoy!

    I’d totally send you some pancakes from my kitchen to Lund, but I guess they won’t survive the long travel, or the post man might eat them ;-)… I can’t imagine having to live without a kitchen (even though I’ve been living without a complete one for a few days recently as well – yay or nay for a uni apartment..). But I bet it’s going to be great once everything is finished – fingers crossed! and a big YAY for architecture university – I just started as well and it’s so great isn’t it?

    The move sounds really tough, but having your own apartment must be exciting! Architecture school sounds fun, too — glad to hear you’re enjoying it. 😀

    And those pancakes look amazing. I love making pancakes (or waffles) with just pure sourdough starter sometimes. Just pour and cook! And then eat. With lots of delicious butter and honey.
