chocolate chip banana pecan muffins-8

29 Mar Chocolate Chip Banana Pecan Muffins

I’ve been sick the entire week and my art lesson was cancelled on Friday so I spent the day baking since I hadn't had the energy to do so while I was sick. I made chocolate chip banana pecan muffins and two loafs of whole grain spelt sourdough bread for my family. The kitchen looked like a mess and I had to spend so much time doing the dishes. If you bake (or cook) a lot you'll know that it's almost impossible to keep your kitchen nice and tidy. Usually I have a couple of bowls with different soaked grains, nuts and seeds scattered...

baked millet with berries-3

22 Mar Crunchy Baked Millet With Berries

Millet has become one of my absolute favorite grains because of it’s nutty flavor and versatility. I like to add millet flour to baked goods since it lends a great texture and flavor to everything from bread to cookies. Cooked millet is also delicious, both sweet and savory. You’ve probably heard about baked oatmeal before which makes the perfect weekend brunch. Baked millet is pretty much the same thing but with millet berries instead of rolled oats. It’s super easy to make and will feed a bunch of people. You could also make it for yourself on a Sunday, have a slice,...

15 Mar Sweet Potato Sourdough Waffles

It wasn't until I sat down to write this post that I realized that my Wednesdays has somehow turned into waffle-days. Every Wednesday I begin school after lunch which means that I have the entire morning to make fancy breakfasts, like waffles or pancakes. Ever since I published this recipe I've been obsessed with sourdough waffles and I've done some experimenting with different flours and flavors. My intentions when developing this recipe was to make a more filling waffle, only made with one flour(except from the brown rice and buckwheat flour from the sourdough starter) and it would not only be gluten free but also...

flourless chocolate hazelnut cake-7

06 Mar Flourless Chocolate Hazelnut Cake

It was my mother's birthday last week and I made a flourless chocolate hazelnut cake for her. Everyone who loves chocolate knows that flourless chocolate cakes are the best, because they're all about that chocolate. There are two ways to make a flourless chocolate cake, either without any flour at all which will give you a super gooey cake with a crackly top(if there’s enough sugar) or made with some kind of nut flour. I find that flourless chocolate cakes with nut flour are super moist and chocolatey while still holding it’s shape and being more cake like than brownie-ish. In...

einkorn and spelt sourdough buns-12

01 Mar 24 Hour Einkorn & Spelt Sourdough Buns

So the headline. Einkorn? You might be thinking ”what’s that?” or "Isn’t that a gluten grain?”. It is a gluten grain but it’s the most ancient kind of wheat and it’s very different from today’s modern hybridized wheat. Apparently einkorn has less genetic resemblance to modern wheat than humans have to chimpanzees! The last few months I’ve been reading a lot about einkorn and how people who are sensitive to gluten(not coeliac!) can tolerate it, especially in combination with sourdough. It’s pretty hard to find it in the stores but it’s increasing in popularity and I guess that it’ll soon be called "the new buckwheat"...

single serving blueberry crumble-1

22 Feb Single Serving Blueberry Crumble

I love love love crumbles and I'ts probably the dessert that I've eaten the most times in my life. My mother(or I) always makes crumble when where having guests over, especially if it's a last minute gathering. We both follow pretty much the same recipe for the crumble topping and then we'll fill it with any kind of berries, apples or rhubarb. Usually, I'll add some cardamom, cinnamon and ginger as well. I love to eat crumble even when I don't have guests over and that's why I created this recipe for a single serving blueberry crumble. It requires only a few ingredients and...
