06 Aug Whole Grain Buckwheat Pancakes

I’m back in France to spend my last weeks of summer vacation here. Even though I love being here I get a lot of baking abstinence because I can’t find my usual grains and flours in the grocery store. Fortunately I have a bag of whole grain buckwheat flour and a bag of almond flour(meal). These flours would make a quite dense and dry cake or bread but for pancakes they work wonders!

I like to use whole grain flours since you get all the amazing nutrients but they often have a very strong flavor and are pretty dense. Whole grain buckwheat flour for example has a very acidic taste but in these whole grain buckwheat pancakes it’s balanced with the almond flour and some honey. If you don’t have whole grain buckwheat flour you can replace it with regular buckwheat flour. It will probably taste better and give fluffier pancakes but they wont be as nutritious.

My baking/making abstinence has been satisfied by making Chocolate Chia Ice Cream which was amazing! You basically mix chia pudding in a blender and freeze in an ice cream maker and it tastes just like ice cream and much better then the worn out chia pudding.

Whole Grain Buckwheat Pancakes

Whole Grain Buckwheat Pancakes

Ingredients

  • 1/2 cup (120 ml) almond flour
  • 1/2 cup (120 ml) buckwheat flour
  • 1/2 teaspoon fine grain sea salt
  • 1 1/2 teaspoon baking soda
  • 2 eggs
  • 2 tablespoons honey
  • 1 tablespoon coconut oil, melted and cooled. plus more for cooking
  • 1 cup (240 ml) non dairy milk (I used rice milk)

Instructions

  1. Mix all of the dry ingredients in a medium sized bowl.
  2. Make a well in the dry ingredients and add the wet ingredients.
  3. Mix well with a wooden spoon until combined.
  4. Heat a non stick pan to medium/high heat and add a tbsp of coconut oil.
  5. Fry the pancakes just over 1 min and then 30 seconds on the other side.
  6. Serve with fresh berries and honey/maple syrup.

    This looks amazing!!! I’ve never ran accross buckwheat flour here in the US, but I’ll have to search for it sometime!! Those pancakes look soooo delicious…
    I’m so jelly that you’re in France… Although, I probs would be pretty bummed out about not being able to find flours and grains. :/

      I’m glad you like the pancakes. If you can’t find buckwheat flour in your grocery store you can order online. Try Bob’s Red Mill. 🙂

    I found your blog via your guestpost for Canella Vita. I can absolutely relate to your feeling when finding “new” teen foodbloggers and with you I’ve found another one now!
    Unfortunately it’s quite impossible to find the glutenfree grains you use where i live, so i can’t bake any of your recipes. But your pictures are so beautiful, i’ll subscribe to your RSS anyway 🙂
