11 Jan Mini Chocolate Chip Banana Granola Cookies
I love these cookies. Everyone in my family (including my sister who’s a very picky eater) loves them. They’re super easy to make and it’s a foolproof recipe, no creaming butter or beating eggs, just mix everything together and bake. Sometimes I like when things are a little bit more complicated and time consuming. I mean, I love baking with sourdough and that’s as far as you can come from quick and easy. However, that doesn’t mean I can’t enjoy making a batch of super easy mini granola cookies.
Even though I didn’t put this recipe in the breakfast category you could totally come away with eating these in the morning. They’re as healthy as oatmeal porridge with some decadent toppings. They also make the perfect little mid day snack since they’re rich in fibre which will leave you full throughout the day. I guess the only problem is that they’re so addictive you wont have any cookies left to bring to school/work in the morning, because you ate all those cookies all by yourself the night before…
And did I mention that it’s a one bowl recipe? And that they’re both gluten free, dairy free and vegan which means that everybody can eat them! What’s not to love about these cookies? They’re filled with some of my favorite ingredients and spices like dark chocolate chunks (In my opinion so much better than chocolate chips), pecans and cinnamon.
I’m probably a little bit too excited about these cookies since they’re just a couple of rustic looking granola cookies. Why can’t you be excited about a little cookie then? There are millions of reasons to be excited about cookies, these in particular. Hope I haven’t given you too high hopes about cookies… These are humble little cookies and it’s just the way I like it!
Notes:
- This is a very small batch of cookies(makes 12 small ones) so you might want to double or triple the recipe.
- The chocolate chips or chocolate chunks can be substituted for equal parts raisins if you want a healthier cookie. I’ve tried it and it’s delicious!
- The dough will look very short but that’s okay. Just press together the cookies with your fingers on the baking tray and when they’re baked they will hold together very well.
- The cookies are a little bit chewy, not crunchy.
Ingredients
- 1 very ripe large banana
- 1/2 teaspoon vanilla extract
- 2 tbsp coconut oil, at room temp
- 1 tbsp maple syrup (or honey if not vegan)
- 1 cup rolled oats
- 1/2 teaspoon cinnamon
- 1/4 teaspoon fine grain sea salt
- 1/2 teaspoon baking powder
- 1/4 cup mini choc chips or chopped dark chocolate
- 1/4 cup finely chopped pecans
Instructions
- Preheat the oven to 175°C/350°F
- Mash together the banana, vanilla extract, coconut oil and honey with a fork in a medium-sized bowl.
- Add the the rest of the ingredients and combine very well with the fork until the dough can somewhat hold together. (It’ll still be quite short but that’s okay.)
- Dollop tablespoon-sized scoops of dough onto a parchment-lined sheet, about an inch apart. Flatten the cookies with your fingers.
- Bake for about 15 minutes, or until golden browned. Let the cookies rest on the baking tray for a few minutes before transferring to a wire rack to cool.
Notes
Store in a lidded container in a cool and dark place(not the fridge).

I made these last night (as a post-exam treat!). They were really good! Plus, I mean, it’s a healthy snack and a cookie all rolled into one, so no room for guilt, right?!
I didn’t have enough honey, so I used some molasses instead. It wasn’t at all bad!
One question though : are these supposed to be really crunchy? Mine were pretty chewy, but that might just be are wacky oven.
