“Mr. Breakfast” and I have an ongoing love/hate relationship. Sure, I love breakfast foods; pancakes, waffles, oatmeal, yoghurt, smoothies etc. However I never know what to make for breakfast when I wake up at 7 am before heading to school. Therefore I love breakfasts that I can make ahead and store in the fridge. This Vanilla Berry Baked Oatmeal is one of those recipes. You can make it on a Sunday and then you’ll have breakfast for the rest of the week!

If you have the patience you can let it cool and then cut into squares so that it’ll look like little oatmeal bars. Then, it’ll almost feel like eating blondies/brownies for breakfast! But if you’re like me you’ll just serve it straight from the oven in a gooey puddle of baked oatmeal and juicy berries. I’ve used a mix of raspberries and blueberries but you can use whatever berries you have on hand like strawberries or blackberries.

Vanilla Berry Baked Oatmeal

Ingredients

  • 1 tbsp ground flax meal
  • 3 tbsp warm water
  • 2 1/2 cups rolled oats
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1 tsp cinnamon
  • 1 tsp vanilla extract
  • 1/3 cup liquid honey
  • 2 1/4 cups plant milk of your choice
  • 1 tbsp canola oil
  • 1 1/2 cups fresh or frozen mixed berries
  • 1/4 cup almonds
  • 2 tbsp sugar

Instructions

  1. Preheat the oven to 175°C / 350° F and lightly oil an 8- or 9-inch square baking dish. Mix the flax meal and the water together in a small bowl. Allow them to thicken for a few minutes.
  2. In a large mixing bowl, mix together the rolled oats, baking powder, salt and cinnamon.
  3. Whisk together the prepared flax mixture, the maple syrup, milk, vanilla extract and oil. Add the wet ingredients to the oat mixture and stir to combine.
  4. Turn the mixture out into your baking dish. Top with the berries and almonds and sugar and transfer the oatmeal to the oven and bake for 25 minutes or until most of the liquid is absorbed and the oats are spongy, but solid. Allow them to cool.
  5. You can serve the baked oatmeal either warm or cold.

    This looks incredibly good. I love my breakfasts sweet and fruity. I tend to have oatmeal every morning. I soak steel cut oats overnight then just turn on the stovetop while my coffee brews. Easy peasy. Like you, if I have to decide what to eat in the morning I get grumpy.

    This looks fantastic! As always, your photography is just beautiful. I love your cookware and cutlery. Incidentally, I just made some baked oatmeal this past weekend with blueberries and strawberries. But now I really want to try it with raspberries! C: Also, I love that your recipe doesn’t use eggs. (I have nothing against eggs, but we normally go through so many it’ll be nice to save them where we can, haha.)

    I love breakfast, so I’ve never really struggled with the idea of making it, but i normally have cold granola so the idea of this prepared hot breakfast is amazing! I will definitely try this. Thanks Thea!
